Pork Meatballs and Whipped Feta

with cherry tomatoes and chimichurri sauce

1. Setup Preheat the oven to 425°F. Chop the garlic, shallot, herbs. Cut the pita into pieces. Cut the cherry tomatoes in half.
2. Make the chimichurri sauce In a bowl, combine the shallot, the herbs, the garlic, the spices to taste, 2 tbsp of red wine vinegar and 3 2P | 4 3P tbsp of olive oil.
3. Make the pork meatballs Mix the ground pork with 1 tbsp. of the chimichurri sauce and season with salt and pepper. Make 3-4 meatballs per person with the ground pork mixture. Put on a baking sheet covered with baking paper and cook in the oven for 14-15 minutes.
4. Make the whipped feta In a mixer or using an arm blender, whip the feta and the yogurt. Kids can help with this step, they'll be curious to taste the mix.
5. Toast the pitas In a pan on medium-high heat, toast the pitas bread 1-2 minutes on each side.
6. Plate your dish Serve the pork meatballs with the whipped feta, the chimichurri sauce, the cherry tomatoes and the pita bread. Bon appétit!
