1. Setup
Preheat the oven to 425° F. Chop the garlic, the shallot, the cilantro and the parsley. Cut the pita into pieces. Cut the cherry tomatoes in half.
2. Make the chimichurri sauce
In a bowl, combine the shallot, the cilantro, the parsley, the garlic, the spice blend, 2 tbsp of red wine vinegar and 2 2P | 3 3P tbsp of olive oil.
3. Make the pork meatballs
Mix the ground pork with 1 tbsp of the chimichurri sauce and season with salt and pepper. Form 4-5 meatball per person with the ground pork mixture. Spread out on a baking sheet and cook in the oven for 12-15 minutes.
4. Make the whipped feta
In a mixer or using an arm blender, whip the feta and the yogurt.
5. Toast the pitas
In a pan, on medium-high heat, toast the pitas bread 1-2 minutes on each side.
6. Plate your dish
Serve the pork meatballs with the whipped feta, the chimichurri sauce, the cherry tomatoes and the pita bread. Bon appétit!
