Pork Meatballs on Lemony Labneh

with pitas, cherry tomatoes and pistachios

1. Cook the tomatoes Preheat the oven to 425°F. Place the tomatoes in a baking dish, add a drizzle of olive oil and season with salt and pepper. Cook in the oven for 20-25 minutes.
2. Setup Chop the garlic, the cilantro, the parsley and the pistachios. Cut the lemon in half. Cut the pitas into pieces.
3. Cook the meatballs In a bowl, combine the pork with the parsley and half of the garlic and season with salt and pepper. Form meatballs and place on a baking sheet. Make around 3-4 meatballs per person. It is possible to make smaller meatballs for children. Cook in the oven for 15-18 minutes.
4. Make the smoked paprika oil In a bowl, combine the rest of the garlic, the smoked paprika and 2 2P | 3 3P tbsp of olive oil.
5. Make the lemony labneh In a bowl, whisk the labneh with the lemon juice.
6. Plate your dish Serve the meatballs on the lemony labneh. Garnish with the cherry tomatoes, the smoked paprika oil, the pistachios, the crumbled feta, the za'atar spices and the cilantro. Serve with the pitas. You can also use the pitas to make sandwiches. Bon appétit!
