Stuffed Pepper with Ground Pork

with orzo, italian spices and cheddar

1. Cook the orzo Preheat oven to 400°F. Bring a pot of salted water to a boil. Cook the orzo for 6-8 minutes until tender. Drain and mix with a drizzle of oil. Adjust the salt and pepper to taste.
2. Setup Chop the onion and basil. Cut the peppers in half lengthwise and hollow out the inside. Some children prefer raw peppers. It is possible to serve half of it raw and serve the orzo mixture on the side.
3. Cook the pork Heat a drizzle of oil in a pan over medium-high heat. Cook the pork, onion and oregano for 4-5 minutes. Add salt and pepper. Add the tomato paste and 1 tsp of sugar.
4. Add the orzo Add the orzo and cook for 1-2 minutes. Adjust salt and pepper.
5. Stuff the peppers Place the peppers on a baking sheet lined with baking paper. Garnish the inside with the orzo and pork mixture. Add the cheddar on top. Bake in the oven for 14-16 minutes. You may have some leftover orzo. Simply eat it with the stuffed pepper.
6. Plate your dish Serve the peppers and garnish with the basil and a drizzle of olive oil to taste. Bon appétit!
