Maple, Sesame and Sweet Chili Tofu Noodles

with broccoli, snap peas and roasted peanuts

1. Setup Bring a pot of water to a boil. Thinly slice the snap peas. Cut the broccoli into small pieces. Chop the garlic. Tear the tofu into pieces. Roughly chop the peanuts.
2. Cook the tofu Warm up a pan over medium-high heat. Roast the peanuts for 3-4 minutes or until browned. Remove from the pan. Add a generous drizzle of oil to the same pan over medium-high heat. Cook the tofu pieces for 5-7 minutes or until browned. Add salt and pepper.
3. Cook the noodles Cook the noodles in boiling water for 1-2 minutes or until tender. Drain.
4. Make the sauce In a bowl, whisk the sauce with the maple syrup, garlic, 1 2P | 2 3P tbsp. of rice vinegar and 2-3 tbsp. of water.
5. Ajouter les légumes Add the broccoli and the snap peas to the pan with the tofu and cook for 2-3 minutes. Add oil if needed. Add salt and pepper to taste. Add the sauce and cook for 1-2 minutes.
6. Plate your dish Serve the tofu mixture on the noodles. Garnish with the peanuts. Bon appétit!
