Tomato and Bell Pepper Grilled Naan

with mozzarella, parmesan, parsley, basil and lemon

1. Grill the naan bread Preheat the oven to 400°F. Optional step. Lightly oil the naan breads and grill them in a ridged skillet for about 2 minutes on each side until browned. Place the naan breads on a baking sheet lined with baking paper. Top with the mozzarella and cook in the oven for 6-8 minutes until the cheese is melted.
2. Setup Cut the tomato into small pieces. Cut the bell pepper into thin strips. Chop the herbs and the garlic.
3. Cook the garlic Heat a drizzle of oil in a small pan on medium high. Cook the garlic for 1 minute until browned. Remove from the skillet.
4. Make the salads In a bowl mix the tomato with the pepper, roasted garlic, herbs, a drizzle of oil, salt and pepper. In another bowl, mix the arugula with the parmesan, lemon juice to taste, and pepper.
5. Plate your dish Top the naan breads with the tomato salad and arugula. Bon appétit!
