Step by step

1. Setup

Thinly slice the mushrooms, red onion and pepper into strips. Chop the cilantro. Cut the tomatoes and cauliflower into small pieces.


2. Cook the vegetables

In a big pan, heat a generous drizzle of oil over medium high heat. Cook the onion, pepper and cauliflower with the spices (to taste, spicy) 4-5 minutes until colored. Add salt and pepper. Remove from the pan and keep warm.


3. Cook the portobello

Add a drizzle of oil and the mushrooms to the pan and cook 2-3 minutes on each side until colored. Add the other vegetables and reheat while waiting to serve.


4. Plate your dish

Heat the tortillas in the microwave. Garnish with the cheese, vegetables, tomatoes, guacamole and cilantro. Add lime juice to taste. Bon appétit!
